The title, referring to mixed drinks, hinted the author’s occupation: bartender. As for other details disclosing daily life on the other side of the counter, they asserted Morrow’s claim that the average barkeep becomes an amateur psychologist and sociologist through his/her dealings with customers from all walks of life.

Adrian Lindsey was a longtime bartender at the fancy Main Street restaurant Revolution, but now serves at Nana’s in Durham. Lindsey, a Winston-Salem native, has seen Durham’s evolution both from a distance and from behind a bar, for better and for worse. He also says that cocktail trends are forever changing and laments the current popularity of frozen drinks.

Defining this customer service marker was the word’s origin: acronym for “To Insure Promptness.” Highlighting its importance for employees was this knowledge: tips were the sole source of income for many hospitality industry employees until the late 1960s. Explaining its enduring importance was discussion of the standard tip rate. Underscoring its mutual value was ways it benefits servers and those served.

Tony Ursone is a bartender at Bittersweet, a drink-meets-dessert destination in downtown Raleigh. Some of the drinks he makes uses rizzo bitters and gin, both of which are made from local North Carolina companies. Other local bars Tony suggests are Ruby Deluxe and the Foundation.
