Gelly – This term is used in the entry on “tsinaw root,” where Hariot describes the Native Americans mashing the root up and making a gelatin out of it. The OED defines “gelatin” as “The substance … into which certain animal tissues… are converted when treated with hot water” and – perhaps more relevant since “tsinaw” is a root – “one of the constituents of gluten [in vegetables], identical with animal gelatin.” See “tsinaw.” - Matt
