Carlos Suarez's father Roberto helped overthrow Cuba's dictator Fulgencia Batista in 1960 with Fidel Castro. But just a few years later, after the family settled in Miami to escape assassination attempts, Carlos trained with a master pastry chef at the Adams Mark Hotel in New York. In 1991, Carlos opened Suarez Bakery in Charlotte, North Carolina.
