In this ongoing series about favorite Southern foods, Garner looks into the kitchen and discovers one of the South's favorite tender, gravy-smothered dishes--country-fried steak. Garner discusses preparation and the difference between country-fried and chicken-fried steak. He lists some places he has found that serve a good country-fried steak, including Simmons Soul Food Restaurant (Charlotte); Riverside Restaurant (Hillsborough); and Miller's (Mocksville).

Fletch Pope of Catawba County is a hunter, farmer, cattleman and raconteur who recently developed an interest in buffalo. As the nation begins considering the cattle and bison as an alternate meat source, Fletch researched ways to create a “beefalo.” After multiple attempts, Fletch produced a hybrid animal mixed with a cow and a buffalo.

"Cattlewoman AJ Stanaland lives her childhood ream of easing cattle and selling farm-to-table beef in a new old-fashioned way," Northwest Land & Cattle in Brunswick county opened an on-farm retail business this summer. the business offers individual cuts of beef and pork but otherwise sales are by the box to encourage use of the whole animal.
