Between Raleigh's Boylan Heights and Warehouse District neighborhoods, Trevor Spear operates from one climate controlled container what equates to a 2.5 acre farm. His 40- foot container, which costs about $149,000, is an insolated hydroponic farm containing racks of gourmet lettuce.

At Windward Farm near Hubert in Onslow County, Don Thompson does not grow lettuce the old fashioned way. He grows it hydroponically throughout the year. With an increase in sales each year since 1992, he now ships a ton a week.
