Abstract:
"A pair of Ocracokers find peace and contentment while digging for treasure in Pamlico Sound. Their ingredients for a perfect summer day? Sunshine, crystal-clear water and a mess of clams." Bob and Ruth Toth moved to Ocracoke in 1978. Ruth, a native of Martin County, had been visiting the island since the age of seven. Avid clam fishermen, the couple owned and operated Cafe Atlantic. A signature dish of the establishment was Clams Casino, a recipe of which is included in the article. Ruth authored a cookbook in 2006 and a revised edition in 2015.
