It was also the first local brewery to employ a coolship, which is a large, open-air vessel used for spontaneous fermentation of beer. The brewery’s bestselling craft beers have been created by head brewer, Chris Tropeano.

Ponysaurus Brewing Company has taken the feel of a backyard cookout and turned it into a business model. Not only do they brew different beers regularly, but they also have an outdoor clubhouse space with grills, candy that can be bought by the scoop, and a homey atmosphere.

Carrboro’s Steel String Brewery recently collaborated with Saxapahaw’s Haw River Farmhouse Ales in 2013 to create a dill-flavored, gose-style beer called Picklemania. Steel String now produces the bulk of it, releasing the beer every few months from its Carrboro taproom. The beer label features a sketch of head brewer Will Isley and his family dog.

Bombshell Beer Company is North Carolina’s only all-female-owned microbrewery with all female brewers. Ellen Joyner, Michelle Miniutti, and Jackie Hudspeth started the brewery in Holly Springs with hopes of bringing more women into the craft beer world.
