Abstract:
The Western North Carolina Cheese Trail is a cooperative effort of ten cheesemakers and four farms. Most of North Carolina’s cheese makers use goat or cow milk, or a combination of both, to make their cheeses. Among the award-winning cheeses is Rocket’s Robiola made at Boxcarr Handmade Cheese, and the Roasted Red Pepper Chevre from Goat Lady Dairy.

Abstract:
Tony Rice and Christina Roche were among the five authors that produced this article. Profiled was 2017’s Girl Scout Gold Award recipient. Also profiled were projects discussing the evolution of flight in winged and non-winged creatures; a tree destroyed by Hurricane Irma grown from seeds carried aboard Apollo 14; eclipse glasses for the Great American Eclipse of 2017, a dinosaur atlas created for children, and the role cheese plays in human health.

Abstract:
When the American Cheese Society held their 29th annual conference and competition in Raleigh, two North Carolina cheesemakers made their mark by taking home prizes. Looking Glass Creamery of Fairview and Goat Lady Dairy of Randolph County, have helped put North Carolina cheesemakers on the map by creating unique cheese that reflects the culture of North Carolina.
