The Chatham Rabbit is an heirloom dish that making a return to local menus. In the late 1800s to early 1900s, rabbits were a cash crop in Chatham County. Tons were shipped throughout the state and up and down the eastern seaboard. Now, in Oakleaf Restaurant in Pittsboro, NC, Chef Brendan Cox is making Chatham Rabbit with heirloom recipes from the past.
